Gift Your Valentine with a Simple Little Kiss (2009)

Meringue Kisses with Nutella
If you are one of  those last-minute-gifters  looking for a Valentine goody, stand still for a minute.   These Meringue Kisses are just what you were looking for.   I bet you have all the ingredients in your house already.   They take no time at all to make and are a perfect gift for the one(s) you love.
Wrap them up in cellophane with a red bow, or serve them for dessert.   They last for days and taste great with a little bit of espresso or tea.
Ingredients
  • 4 egg whites (large eggs!)
  • 2/3 cup sugar
  • 2 teaspoons cornstarch
  • pinch of salt
  • 14/ teaspoon vanilla
  • 1/4 teaspoon almond extract
  • nutella, or melted bittersweet chocolate
Directions
Preheat oven to 225.   Line two baking sheets with parchment or silpats.
Crack the eggs carefully.  No yolks in the whites!  Pop the whites into a stand mixer if you have one, or in a bowl and add the vanilla and almond and the salt.  Whisk away on high until frothy but no peaks are formed.

Mix the sugar with the cornstarch (no lumps) and with the mixer on medium pour the sugar mixture in a steady stream at the edge of the bowl  until it is incorporated.  Scrape the bowl once with a spatula to make sure all the sugar is incorporated.  Now whiz on highest speed until stiff peaks form and the stuff looks glossy.   Should take less than a minute.

If you are brave, use a pastry bag with a 1/2 inch plain tip, or a ziplock bag to pipe the Meringues onto the cookie sheets.   If that makes you nervous, just spoon little blobs on the cookie sheet and use a twist of the spoon to shape them into little kisses.   They should look homemade so don't worry about perfection!   You can place them very close together on the cookie sheets.

Bake 30 minutes and rotate the baking sheets.  Add another 35 minutes to the cooking time and then turn off the oven and don't open the door!  Leave them in there another 60 minutes.  Remove and let them cool before handling.

While they cool, gently melt the chocolate (in a water bath or the microwave) or nutella until spreadable.   Let the mixture cool somewhat.  Take two Meringues and spread some nutella or chocolate on the bottom of one cookie.  Attach the other cookie (a sandwhich) and there is your kiss.    Let them cool a bit before packaging.

I have been craving meringue since the pavlova yesterday ... and now here you go adding to my NEED!!! I guess I'm just going to have to get over my stove-rejection after baking all those damn cookies and just make them myself. Luscious ... and nutella ... heavens-to-betsy ... to. die. for.

I know you have everything in your kitchen for these, maybe not nutella, but a little chocolate will do. And jam will do in a pinch.

Shortcut alert!

Go to Trader Joe's and buy their meringues, and some nice dark chocolate (they have lots of kinds) to do the middles. They do teensy button sized meringues too, but my honey says those have too much vanilla, so we'll be sticking with the normal sized ones.

I know, not home made, but way faster, assuming you pass a TJs on the way home. Not as good as Auntie Mary's home made meringues, nor my mom's Pavlova, but damn good nevertheless.

GeeBee - yep, TJs has some good ones, but they aren't certified gluten free, so we have to make them on our own. But great idea. Chocolate or nutella will do. Enjoy!
TJs ought to do a better job of checking for gluten-free-ness. We have a couple of relatives who visit who have gluten problems, so we are always glad to find something new that suits them. We buy the banana waffles anyway since they are so good, but the cousins love them!

Have you considered writing a cookbook? Your recipes are great, your photography is impeccable, and your stuff is GLUTEN-FREE. So many gluten-free cookbooks are awful.

Karin - it was a ziplock bag with a piping tip. I lost it a couple of times in the bag. I am not so good at piping. I did have bags, but they were too small. Yep, cannot live without silpats. Best money I ever spent on baking stuff. Shortcuts are totally cool.

Lisa - you could absolutely do these with a hand mixer. But if I ever run across another stand mixer hanging around it is yours! Thanks so much. That is a thought in the back of my head. All the GF books I come across restrict dairy, fats and all the good stuff! No fun.
These look delicious!

Gotta love the Silpat. It is a lifesaver. However, a word to the wise - never accidentally set a baking sheet with a Silpat on it on top of a burner of an electric stove that is set on high. It doesn't turn out well. Silpats burn, they smell and Geeky Fiance's get angry when you ruin his favorite kitchen gadget.

lulu, I love this! and along with everyone else goading you, when will you write your cookbook? I'm celiac and HATE my cookbooks, in fact, despise most of the food. It's almost impossible to remain healthy... and I was so diligent for the first year.
